Hummus Roasted Corn Salad

This quick and simple chopped salad is as filling as it is tasty. Perfect for those summer afternoons when you want something light that's also filling.

1Chop lettuce, peas, and tomatoes into bite-size pieces. Using a paring knife, cut corn off of its cob and add to a warm saucepan, along with olive oil and hummus. Fry together until corn is warm. Mix in vinegar and pour over rest of veggies. Toss all ingredients together well and serve salad warm.


2 ears corn

1 cup cherry tomatoes

1 head lettuce

1 cup snap peas

¼ cup sundries tomato hummus

¼ cup olive oil

2 tablespoons rice vinegar
