1Toss carrots in honey and olive oil until well coated.
2Salt to taste.
3Place on baking sheet and top with chopped nuts and fruit.
4Roast at 350ºF until thickest part of carrots becomes slightly soft.
5Serve warm and enjoy!
2 bunches rainbow carrots, tops removed
1/2 cup Peacock Fancy Trail mix, chopped
2 tbsp honey
2 tbsp olive oil
Salt to taste
